Why Slow Cooking Rocks
The slow cooking movement has had a big resurgence in popularity and it's not hard to see why!
Slow cookers are widely available and don't cost a lot. Once you've got one you'll find you can make amazing meals with cheaper cuts of meat. Shanks, Lamb Shoulder, Chicken Thighs, Brisket, Shin and Oxtail are all transformed with long slow cooking to become meltingly tender. As an added bonus these cuts of meat tend to have more flavour than other leaner cuts.
Slow-cooking is also a life saver when you're busy, if you find yourself rushing in the morning you can even prepare everything the night before. Simply load up the slow-cooker dish and store it overnight in the fridge so it will be ready to go in the morning. Remember you'll want to have the dish close to room temp so leave it on the bench for 15-20 mins before turning it on.
