Corned beef is always a treat! Traditionally served with buttery mashed potatoes and vegetables, however in our house we love to mix it up and serve this with crisp leaf salad with creamy feta cheese and for that carb fix a freshly made potato & chive salad.
1kg (approx) corned silverside
1 x Carrot (diced)
1 x Onion (diced)
Splash of malt vinegar
1 x Hammerhead Go Gourmet Corned Beef
1. Add carrot & onion to slow cooker, then the Go Gourmet Corned Beef.
2. Add vinegar and water.
3. Cook for 8 hours on low or 6 hours on high. (Depending on your slow cooker).
4. After cook time is up, leave in slow cooker for ten minutes after switching off to rest.
5. Remove from slow cooker, pat dry and scrape/remove any access fat. Slice and serve.
(Juices can be strained and used to make a fantastic mustard sauce!)
Once cooked and rested rub meat with a little honey, orange juice & wholegrain mustard (combine the ingredients first) and roast in the oven to give a delicious glaze.(Roast at 200°c for around 20-30 minutes.)
